I am going to share a recipe that I love making every fall. I blame this recipe for the 30 pounds I have gained since I got married. They are so yummy!

PUMPKIN BARS
(from my mom's kitchen)

1 Cup Canola Oil
2 Cups White Sugar
4 Eggs
2 Cups Pumpkin (or 1 small can works)
2 Tsp Cinnamon
2 Cups Flour
1/2 Tsp Salt
1 Tsp Baking Soda
2 Tsp Baking Powder

Mix. Bake in a cookie sheet for 25 minutes at 350 degrees.

Let Cool.

Cream Cheese Frosting
6 oz. cream cheese
1 Tsp Almond Extract
1/2 Cup of Butter (softened - not melted)
2 Cups of Powdered Sugar
1 Tbsp of Cream or Milk
1 Tsp Vanilla
This is one of those recipes that is so easy to alter with healthier ingredients.  I use it for muffins and add wheat germ and nuts or chocolate chips, too.
